Description
Zero Point Taco Soup is a hearty, guilt-free Weight Watchers favorite featuring lean chicken, beans, and vegetables, easily made in a slow cooker or on the stovetop.

- 1 lb skinless, boneless chicken breast
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes (with green chilies if preferred)
- 1 (8 oz) can tomato sauce
- 1 packet taco seasoning (low sodium or homemade)
- 1 cup diced onion
- 1½ cups chicken broth
- Optional toppings: lime wedges, chopped cilantro, fat-free Greek yogurt
Instructions
- Slow Cooker: Place all ingredients in the slow cooker and stir to combine.
- Slow Cooker: Cook on low for 6–8 hours or high for 3–4 hours, until chicken is cooked through.
- Slow Cooker: Remove chicken, shred with two forks, and return to the soup. Stir well.
- Slow Cooker: Serve hot with optional toppings and enjoy a filling, zero-point meal!
- Stovetop: Add all ingredients to a large pot. Bring to a boil over medium-high heat.
- Stovetop: Reduce heat and simmer for 30–40 minutes, stirring occasionally.
- Stovetop: Remove chicken, shred, return to pot, and stir before serving.

- Drain and rinse beans to reduce sodium.
