- 1 lb ground chicken or turkey
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 2 cups uncooked lasagna noodles, broken into pieces
- 1 tsp Italian seasoning
- ½ tsp crushed red pepper flakes (optional)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 1 cup heavy cream (or half-and-half)
- Salt and black pepper to taste
- Fresh parsley or basil, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add ground chicken, onion, and garlic, cooking until meat is browned and onions are tender.
- Stir in chicken broth, Italian seasoning, red pepper flakes, and lasagna noodles. Simmer 10–12 minutes until noodles are tender.
- Reduce heat to low, stir in cream, ricotta, mozzarella, and parmesan until smooth and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley or basil, alongside crusty bread.
Notes
- For a lighter version, use part-skim ricotta and mozzarella or swap half-and-half for 2% milk.
- If noodles are getting too soft, cook them al dente and add to the pot just before serving to maintain texture.
