Description
White Chicken Lasagna Soup is a creamy, comforting one-pot dish inspired by white lasagna, ready in 30 minutes.

- 2 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 250 g cooked halal chicken breast, shredded
- 4 cups chicken broth (halal)
- 1 cup milk
- 1 cup heavy cream
- ½ tsp dried oregano
- ½ tsp dried basil
- ¼ tsp ground black pepper
- Salt to taste
- 6–8 lasagna noodles, broken into pieces
- 1 cup shredded mozzarella
- ½ cup grated Parmesan
- ½ cup ricotta cheese
- Optional: fresh parsley or spinach for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and sauté until soft, about 4 minutes.
- Stir in garlic and cook for 30 seconds. Add shredded chicken, broth, milk, cream, and all the dried herbs and spices. Bring to a gentle boil.
- Add broken lasagna noodles and simmer uncovered for 10–12 minutes, or until noodles are tender.
- Stir in mozzarella and Parmesan until melted.
- Turn off the heat and swirl in the ricotta for extra creaminess.
- Garnish with fresh parsley or a handful of baby spinach if desired. Serve hot and enjoy!
Notes
- You can use any cooked chicken; adjust salt to taste.
- For a gluten-free version, use gluten-free lasagna noodles or omit noodles.
- To lighten the dish, substitute whole milk with skim or 2% milk and reduce cream.
- Leftovers refrigerate well; reheat gently on the stove.
