White Chicken Chili: Creamy, hearty one-pot weeknight dinner featuring tender chicken and white beans.

- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 lb cooked chicken breast, shredded
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) chopped green chilies
- 3 cups low-sodium chicken broth
- 1 tsp ground cumin
- ½ tsp chili powder
- ½ tsp dried oregano
- Salt and pepper, to taste
- ½ cup plain Greek yogurt or sour cream (for creaminess)
- Fresh cilantro and lime wedges, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook for 3–4 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add shredded chicken, white beans, green chilies, chicken broth, cumin, chili powder, oregano, salt, and pepper. Stir well.
- Bring to a gentle boil, then reduce heat and simmer for 10–12 minutes to blend flavors.
- Remove from heat and stir in Greek yogurt until smooth and creamy.
- Serve hot, garnished with fresh cilantro and lime wedges.
Notes
- Can substitute Greek yogurt with sour cream for creaminess.
- Use low-sodium ingredients and adjust salt to taste.
- Garnish with cilantro and lime wedges; add jalapeño for extra heat if desired.
- Leftovers refrigerate for 3–4 days; reheat on the stove.
