Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 lb cooked chicken breast, shredded
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) chopped green chilies
  • 3 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp dried oregano
  • Salt and pepper, to taste
  • ½ cup plain Greek yogurt or sour cream (for creaminess)
  • Fresh cilantro and lime wedges, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook for 3–4 minutes until softened.
  2. Stir in garlic and cook for 30 seconds until fragrant.
  3. Add shredded chicken, white beans, green chilies, chicken broth, cumin, chili powder, oregano, salt, and pepper. Stir well.
  4. Bring to a gentle boil, then reduce heat and simmer for 10–12 minutes to blend flavors.
  5. Remove from heat and stir in Greek yogurt until smooth and creamy.
  6. Serve hot, garnished with fresh cilantro and lime wedges.
