  • 2 tbsp tomato paste
  • 4 cups chicken broth
  • 1 (14 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 (9 oz) package refrigerated cheese tortellini
  • 2 cups fresh spinach, roughly chopped
  • Salt and pepper to taste
  • ½ cup grated parmesan cheese (plus more for topping)

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Add sausage and cook until browned, breaking it up with a spoon, about 6–8 minutes.
  2. Add onion and cook until softened, 4–5 minutes. Stir in garlic, Italian seasoning, and red pepper flakes; cook for 1 minute.
  3. Add tomato paste and cook for 2 minutes to deepen the flavor.
  4. Pour in chicken broth and crushed tomatoes. Stir and bring to a simmer.
  5. Reduce heat and simmer gently for 30–40 minutes to let flavors meld.
  6. Stir in heavy cream and tortellini. Cook for 5–7 minutes until tortellini are tender.
  7. Add spinach and cook for 1–2 more minutes until wilted.
  8. Stir in parmesan cheese and season with salt and pepper to taste.
  9. Serve hot with extra parmesan and crusty bread if desired.

Notes

  • Use turkey sausage for a lighter version; pork sausage works too.
  • If you prefer a thicker soup, simmer a bit longer to reduce.
  • Leftovers can be refrigerated for up to 3–4 days; the soup may thicken—stir in a splash of broth to loosen.
