Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (10 oz) can diced tomatoes with green chilies (like mild Rotel)
  • 1½ cups chicken broth
  • ½ small onion, chopped
  • 1 tsp cumin
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • 1 (8 oz) block cream cheese
  • Optional toppings: shredded cheese, tortilla chips, avocado, cilantro

Instructions

  1. Place chicken breasts at the bottom of your crockpot.
  2. Add corn, black beans, diced tomatoes, onion, broth, and all spices.
  3. Place the cream cheese block on top (do not stir).
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  5. Shred the chicken with two forks and stir the soup until creamy and fully mixed.
  6. Serve warm with your favorite toppings.

Notes

  • No browning required: the chicken cooks from raw in the slow cooker and will become tender and shreddable.
