- 2 lbs ground beef (or half beef, half ground turkey for a lighter version)
- 1 large onion, diced
- 1 green bell pepper, diced
- 4 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 2 cups beef broth
- 3 tbsp chili powder
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- 1 tbsp olive oil
- Optional toppings: shredded cheddar cheese, diced onions, sliced jalapenos, sour cream
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat.
- Add diced onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
- Stir in chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper. Cook for 1 minute to release the spices’ aroma.
- Add crushed tomatoes, kidney beans, pinto beans, and beef broth. Stir well to combine.
- Bring to a boil, then reduce heat to low. Simmer uncovered for 45-60 minutes, stirring occasionally, until thickened and flavors have blended.
- Taste and adjust seasoning if needed.
- Serve hot with your favorite toppings.
