  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 2 cups beef broth
  • 3 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper (adjust to taste)
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • Optional toppings: shredded cheddar cheese, diced onions, sliced jalapenos, sour cream

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat.
  2. Add diced onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
  3. Stir in chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper. Cook for 1 minute to release the spices’ aroma.
  4. Add crushed tomatoes, kidney beans, pinto beans, and beef broth. Stir well to combine.
  5. Bring to a boil, then reduce heat to low. Simmer uncovered for 45-60 minutes, stirring occasionally, until thickened and flavors have blended.
  6. Taste and adjust seasoning if needed.
  7. Serve hot with your favorite toppings.
