Description

Starbucks Pumpkin Cream Cheese Muffins: Moist, spiced pumpkin muffins filled with a rich cream cheese center and topped with crunchy pepitas—bakery-style fall indulgence you can bake at home.

  • 1 tsp baking soda

  • 1/2 cup vegetable oil
  • 1 cup pumpkin purée
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 6 oz cream cheese, softened
  • 2 tbsp granulated sugar
  • 1/4 tsp vanilla extract
  • 2 tbsp roasted pepitas (pumpkin seeds)

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. In another bowl, mix oil, pumpkin purée, sugar, eggs, and vanilla until smooth.
  4. Gradually add dry ingredients to wet, stirring just until combined—don’t overmix.
  5. In a small bowl, beat cream cheese with sugar and vanilla until smooth.
  6. Fill each muffin cup about 2/3 full with batter. Drop about 1 tsp of the cream cheese mixture into the center of each muffin.
  7. Sprinkle tops with pepitas.
  8. Bake for 18–20 minutes, or until a toothpick inserted into the muffin (not the filling) comes out clean.
  9. Cool in pan for 5 minutes, then transfer to a wire rack to finish cooling.
