Spooky Cinnamon Rolls: soft gluten-free cinnamon rolls with a gooey filling and festively spooky frosting for Halloween.

- 2 tbsp sugar
- 2¼ tsp instant yeast
- ¼ tsp salt
- ¾ cup warm milk (dairy or non-dairy)
- 2 tbsp unsalted butter, melted (or dairy-free alternative)
- 1 egg
- For the Filling:
- ¼ cup unsalted butter, softened
- ⅓ cup brown sugar
- 1½ tsp cinnamon
- For the Frosting:
- ¾ cup powdered sugar
- 2–3 tsp milk (as needed for consistency)
- Food coloring (black, orange, or purple)
- Candy eyeballs, Halloween sprinkles, or other spooky decorations
Instructions
- In a bowl, mix warm milk, melted butter, egg, and sugar.
- In another bowl, whisk together gluten-free flour, salt, and yeast. Add wet mixture and stir until dough forms.
- Cover and let rest for 10 minutes. Meanwhile, mix butter, brown sugar, and cinnamon for filling.
- Roll out dough on a floured surface into a rectangle. Spread filling evenly.
- Roll up tightly from the long side and slice into 8 rolls. Place in a greased round baking dish.
- Cover and let rise for 30–40 minutes.
- Preheat oven to 350°F (175°C). Bake for 20–25 minutes or until golden brown.
- While cooling, mix frosting ingredients and tint with spooky Halloween colors.
- Drizzle frosting over warm rolls and decorate with candy eyes or Halloween sprinkles.
