Description

Slow Cooker Cream Cheese Crack Chicken Chili: a creamy, cheesy crockpot chicken chili that’s loaded with ranch flavor, corn, beans, and a topping of melted cream cheese and cheddar for an irresistible finish.

  • 2 large boneless, skinless chicken breasts
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1½ cups chicken broth
  • 1 packet (1 oz) halal ranch seasoning
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp onion powder
  • 1 block (8 oz) cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon, cooked and crumbled
  • Optional toppings: green onions, extra cheese, Fritos, cornbread

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Add corn, black beans, tomatoes with green chiles, chicken broth, halal ranch seasoning, chili powder, cumin, and onion powder. Stir gently to combine.
  3. Place the cream cheese on top of the mixture; do not stir in.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  5. Remove the chicken, shred with two forks, and return to the pot.
  6. Stir everything together until the cream cheese is melted and well incorporated. Add shredded cheddar cheese and turkey bacon; stir again and let sit for 5–10 minutes.
  7. Serve warm with toppings such as green onions, extra cheese, or Fritos.
