- 1 lb boneless, skinless chicken thighs or breasts, cut into chunks
- 3 medium carrots, sliced
- 3 medium potatoes, diced
- 2 celery stalks, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
- Fresh parsley, for garnish
Instructions
- Place chicken, carrots, potatoes, celery, onion, and garlic into the slow cooker.
- Pour in chicken broth, then add thyme, rosemary, bay leaf, salt, and pepper. Stir to combine.
- Cover and cook on low for 7 hours or high for 3-4 hours, until chicken is tender and vegetables are cooked through.
- If you prefer a thicker stew, stir in the cornstarch mixture during the last 15 minutes of cooking.
- Remove bay leaf, garnish with parsley, and serve hot.
Notes
- You can substitute chicken thighs for breasts if you prefer.
- To thicken, add the cornstarch slurry during the last 15 minutes (or omit for a thinner broth).
- Leftovers refrigerate well for 3-4 days; freeze for up to 3 months.
