Description

  • lbs boneless, skinless chicken breasts or thighs
  • 1½ cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 medium potato, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • ½ cup heavy cream or whole milk
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp all-purpose flour
  • 1 sheet puff pastry or refrigerated biscuit dough (halal-friendly), for topping

Instructions

  1. Add chicken, vegetables, potato, onion, and garlic to the slow cooker.
  2. In a separate bowl, whisk together the cream of chicken soup, chicken broth, thyme, parsley, salt, and pepper. Pour over the chicken mixture.
  3. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
  4. Remove the chicken, shred with two forks, then return to the slow cooker.
  5. In a small pan, heat olive oil over medium heat. Stir in the flour and cook for 1–2 minutes to form a roux. Slowly whisk in the heavy cream and cook until slightly thickened.
  6. Stir the cream mixture into the slow cooker and mix well. Let it cook uncovered for an additional 20–30 minutes to thicken.
  7. While it finishes cooking, bake the puff pastry or biscuits according to package instructions.
  8. Serve pot pie filling in bowls topped with warm, golden pastry or biscuits.

  • For a thicker filling, cook longer uncovered or reduce the liquid slightly.
  • To keep it gluten-free, use gluten-free puff pastry or biscuits.
  • Leftovers refrigerate well for up to 3 days; reheat in a pot or microwave.
