Slow Cooker Chicken Pot Pie: a creamy, comforting, one-pot dish that cooks in the slow cooker for an easy, hands-off family-friendly dinner.

- 1½ lbs boneless, skinless chicken breasts or thighs
- 1½ cups frozen mixed vegetables (peas, carrots, corn, green beans)
- 1 medium potato, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- ½ cup heavy cream or whole milk
- 1 tsp dried thyme
- 1 tsp dried parsley
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
- 1 tbsp all-purpose flour
- 1 sheet puff pastry or refrigerated biscuit dough (halal-friendly), for topping
Instructions
- Add chicken, vegetables, potato, onion, and garlic to the slow cooker.
- In a separate bowl, whisk together the cream of chicken soup, chicken broth, thyme, parsley, salt, and pepper. Pour over the chicken mixture.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
- Remove the chicken, shred with two forks, then return to the slow cooker.
- In a small pan, heat olive oil over medium heat. Stir in the flour and cook for 1–2 minutes to form a roux. Slowly whisk in the heavy cream and cook until slightly thickened.
- Stir the cream mixture into the slow cooker and mix well. Let it cook uncovered for an additional 20–30 minutes to thicken.
- While it finishes cooking, bake the puff pastry or biscuits according to package instructions.
- Serve pot pie filling in bowls topped with warm, golden pastry or biscuits.
Notes
- For a thicker filling, cook longer uncovered or reduce the liquid slightly.
- To keep it gluten-free, use gluten-free puff pastry or biscuits.
- Leftovers refrigerate well for up to 3 days; reheat in a pot or microwave.
- You can swap in rotisserie chicken for even quicker prep.
