Sloppy Joe Potato Skillet: a one-skillet twist on a classic where crispy potatoes meet saucy, savory beef for a family-friendly dinner.

- 1½ lbs potatoes, diced (skin on or peeled)
- 2 tbsp olive oil
- 1 lb ground beef (or ground turkey)
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 small bell pepper, diced
- 1 cup tomato sauce
- 1 tbsp tomato paste (optional for richer flavor)
- 1 tbsp Worcestershire sauce (use halal version)
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup shredded cheddar cheese
- Chopped green onions or parsley for garnish (optional)
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced potatoes and cook for 10–12 minutes, stirring occasionally, until golden and tender. Transfer to a plate and set aside.
- In the same skillet, heat another tablespoon of olive oil. Add ground beef and cook until browned.
- Add onion, garlic, and bell pepper; cook for 4–5 minutes until softened.
- Stir in tomato sauce, tomato paste, Worcestershire sauce, paprika, salt, and pepper. Simmer for 5–7 minutes until thickened.
- Return the cooked potatoes to the skillet and stir gently to coat with the sauce.
- Sprinkle cheese evenly over the top. Cover and cook on low heat until cheese is melted, about 2–3 minutes.
- Garnish with green onions or parsley before serving.

- Halal option: use halal-certified beef and halal Worcestershire sauce.
- To vary the meat, substitute ground turkey for a lighter option.
- To ensure gluten-free, verify that the Worcestershire sauce is gluten-free.
- For a spicier kick, add a pinch of red pepper flakes.
