- ½ cup frozen peas and carrots, thawed
- 2 eggs, lightly beaten
- 3 tbsp gluten-free Japanese BBQ sauce (like Bachan’s)
- 1 tbsp tamari or gluten-free soy sauce
- 1 tsp rice vinegar
- 1 green onion, sliced (for garnish)
- Optional: toasted sesame seeds, chili flakes
Instructions
- Heat sesame oil and neutral oil in a large skillet or wok over medium-high heat.
- Sauté onion and garlic until fragrant, about 2 minutes.
- Push the aromatics to the side and pour in the beaten eggs. Scramble quickly until just cooked, then mix with onion and garlic.
- Add the diced chicken and stir-fry for 1–2 minutes until warmed through.
- Stir in peas and carrots, followed by the rice. Break up any clumps and combine everything well.
- Pour in Japanese BBQ sauce, tamari, and rice vinegar. Toss to coat the rice evenly, allowing it to sizzle and caramelize slightly.
- Cook for another 2–3 minutes, stirring occasionally.
- Garnish with sliced green onions, sesame seeds, and chili flakes if desired.
