Description

  • ½ cup frozen peas and carrots, thawed
  • 2 eggs, lightly beaten
  • 3 tbsp gluten-free Japanese BBQ sauce (like Bachan’s)
  • 1 tbsp tamari or gluten-free soy sauce
  • 1 tsp rice vinegar
  • 1 green onion, sliced (for garnish)
  • Optional: toasted sesame seeds, chili flakes

Instructions

  1. Heat sesame oil and neutral oil in a large skillet or wok over medium-high heat.
  2. Sauté onion and garlic until fragrant, about 2 minutes.
  3. Push the aromatics to the side and pour in the beaten eggs. Scramble quickly until just cooked, then mix with onion and garlic.
  4. Add the diced chicken and stir-fry for 1–2 minutes until warmed through.
  5. Stir in peas and carrots, followed by the rice. Break up any clumps and combine everything well.
  6. Pour in Japanese BBQ sauce, tamari, and rice vinegar. Toss to coat the rice evenly, allowing it to sizzle and caramelize slightly.
  7. Cook for another 2–3 minutes, stirring occasionally.
  8. Garnish with sliced green onions, sesame seeds, and chili flakes if desired.
