- 1 lb Italian turkey sausage (casings removed if using links)
- 1 tbsp olive oil or butter
- 1 small onion, diced
- 3 garlic cloves, minced
- 3 medium potatoes, peeled and diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup milk (or half-and-half for creamier texture)
- ½ cup heavy cream (optional)
- 1 tsp Italian seasoning
- ½ tsp crushed red pepper flakes (optional)
- Salt and black pepper to taste
- 2 cups fresh spinach or kale, chopped
- Grated parmesan cheese, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage, breaking it apart as it cooks until browned. Remove excess grease if needed.
- Stir in onion, garlic, carrots, and celery. Cook until softened.
- Add potatoes, broth, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Stir in milk and cream (if using). Simmer for 5 minutes until creamy.
- Add spinach or kale and cook just until wilted.
- Serve hot, topped with parmesan cheese.
Notes
- For a lighter version, omit the heavy cream or use milk only.
- To make this gluten-free, ensure the broth is gluten-free and use gluten-free sausage.
- Leftovers can be stored in the fridge for up to 3 days and reheated gently.
- You can substitute kale with spinach if preferred.
