Instructions

  1. Mix cooked sushi rice with rice vinegar, sugar, and salt. Using damp hands, shape into small rectangles (about 2 inches long).
  2. Heat neutral oil in a skillet over medium heat. Fry rice pieces on each side until golden and crispy, about 2–3 minutes per side. Drain on paper towels.
  3. In a bowl, mix cooked halal salmon with mayo, sriracha, sesame oil, and salt until creamy.
  4. Spread mashed avocado on each crispy rice cake, then top with a spoonful of spicy salmon.
  5. Garnish with a jalapeño slice, a drizzle of sriracha, and a sprinkle of sesame seeds.
