- 2 cups cooked sushi rice (cooled completely)
- 1 tbsp rice vinegar
- ½ tsp sugar
- ½ tsp salt
- Neutral oil, for frying
- 4 oz cooked halal salmon (or sushi-grade if available)
- 1½ tbsp halal mayonnaise
- 1½ tsp sriracha
- ½ tsp sesame oil
- Pinch of salt
- 1 ripe avocado, mashed
- Thinly sliced jalapeño
- Extra sriracha (optional drizzle)
- Toasted sesame seeds
Instructions
- Mix cooked sushi rice with rice vinegar, sugar, and salt. Using damp hands, shape into small rectangles (about 2 inches long).
- Heat neutral oil in a skillet over medium heat. Fry rice pieces on each side until golden and crispy, about 2–3 minutes per side. Drain on paper towels.
- In a bowl, mix cooked halal salmon with mayo, sriracha, sesame oil, and salt until creamy.
- Spread mashed avocado on each crispy rice cake, then top with a spoonful of spicy salmon.
- Garnish with a jalapeño slice, a drizzle of sriracha, and a sprinkle of sesame seeds.
Notes
- Use damp hands when shaping rice to help it hold together.
- Let the rice cool completely to ensure crispiness when frying.
- Adjust spiciness by controlling the amount of sriracha.
- Ensure mayo is halal-certified if needed; check gluten-free status if required.
