- 2 cups powdered sugar
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, pumpkin spice, and salt.
- In another bowl, whisk pumpkin puree, brown sugar, oil, eggs, and vanilla until smooth.
- Gradually fold in dry ingredients until just combined.
- Scoop batter onto baking sheets (about 2 tbsp per cookie), spacing 2 inches apart.
- Bake 10–12 minutes, until cookies are set and spring back when touched. Let cool completely.
- For frosting: Beat cream cheese and butter until smooth. Add powdered sugar, maple syrup, and vanilla; beat until creamy.
- Spread frosting on the flat side of one cookie, then sandwich with another.
- Chill for 30 minutes before serving for best texture.
Notes
- Let the cookies cool completely before filling to avoid melting the frosting.
- Chilling the assembled pies helps the frosting set and makes handling easier.
- Storage: Refrigerate in an airtight container for up to 3 days.
- You can substitute maple syrup with honey if desired.
