- ½ cup vegetable oil
- ¼ cup milk
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 egg yolk
- ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease.
- In a large bowl, whisk together flour, sugars, baking soda, salt, pumpkin pie spice, and cinnamon.
- In another bowl, beat the eggs, pumpkin puree, oil, milk, and vanilla until smooth.
- Add the wet ingredients to the dry ingredients and stir just until combined. Do not overmix.
- In a separate bowl, beat the cream cheese, sugar, egg yolk, and vanilla until smooth.
- Fill muffin cups about ¾ full with the pumpkin batter. Drop about 1 tablespoon of cream cheese mixture on top of each and gently swirl with a toothpick or knife.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack.
