Parmesan Italian Sausage Soup: Creamy, cozy, and bursting with rich Italian flavors—this one-pot soup is the perfect comfort meal for chilly days or busy weeknights.

- 1 tbsp olive oil
- 1 lb halal Italian-style turkey sausage, casings removed
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- 1 tbsp tomato paste
- 4 cups low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes
- ¾ cup uncooked ditalini pasta
- 1 cup baby spinach, chopped
- ½ cup heavy cream
- ¾ cup grated Parmesan cheese
- Salt and black pepper, to taste
- Optional toppings: more Parmesan, fresh parsley, crushed red pepper
Instructions
- Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it up with a spoon.
- Add diced onion and sauté until softened, about 4–5 minutes. Stir in garlic, Italian seasoning, and red pepper flakes.
- Mix in tomato paste and cook for another minute.
- Pour in chicken broth and diced tomatoes. Bring to a boil.
- Add ditalini pasta and cook according to package instructions, about 10–12 minutes.
- Reduce heat and stir in chopped spinach until wilted.
- Add heavy cream and Parmesan cheese, stirring until the soup is creamy and well combined.
- Season with salt and black pepper to taste.
- Serve hot with extra Parmesan and parsley on top, if desired.
Notes
- Can be made gluten-free by using gluten-free pasta.
- Leftovers refrigerate well for 3–4 days; reheat gently on the stove. The soup may thicken as it sits—thin with a splash of broth if needed.
- For a spicier kick, keep red pepper flakes or add additional pepper flakes to taste.
