Description

Ingredients

  • 1 tbsp olive oil
  • 1 lb halal Italian-style turkey sausage, casings removed
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • 1 tbsp tomato paste
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • ¾ cup uncooked ditalini pasta
  • 1 cup baby spinach, chopped
  • ½ cup heavy cream
  • ¾ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Optional toppings: more Parmesan, fresh parsley, crushed red pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it up with a spoon.
  2. Add diced onion and sauté until softened, about 4–5 minutes. Stir in garlic, Italian seasoning, and red pepper flakes.
  3. Mix in tomato paste and cook for another minute.
  4. Pour in chicken broth and diced tomatoes. Bring to a boil.
  5. Add ditalini pasta and cook according to package instructions, about 10–12 minutes.
  6. Reduce heat and stir in chopped spinach until wilted.
  7. Add heavy cream and Parmesan cheese, stirring until the soup is creamy and well combined.
  8. Season with salt and black pepper to taste.
  9. Serve hot with extra Parmesan and parsley on top, if desired.

Notes

  • Can be made gluten-free by using gluten-free pasta.
  • Leftovers refrigerate well for 3–4 days; reheat gently on the stove. The soup may thicken as it sits—thin with a splash of broth if needed.
