- 1 tbsp olive oil
- 1 lb boneless skinless chicken breasts, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup long-grain rice, rinsed
- 2 ½ cups chicken broth
- 1 cup milk (or dairy-free milk)
- 1 cup shredded cheddar cheese (or dairy-free alternative)
- 1 tsp dried thyme
- Salt and black pepper, to taste
- 2 tbsp parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken and onion, cooking until chicken is lightly browned.
- Stir in garlic, carrots, thyme, salt, and pepper.
- Add rice and broth. Bring to a boil, reduce heat, cover, and simmer 18–20 minutes until rice is tender.
- Stir in milk and cheese until creamy.
- Garnish with parsley and serve warm.
Notes
- For a dairy-free version, use dairy-free milk and cheese.
- If using regular rice, ensure it is fully cooked; you can add a splash more broth if needed.
- Leftovers refrigerate well for 3–4 days. Reheat gently on the stovetop or in the microwave.
- Make it gluten-free by using a gluten-free chicken broth.
