Old Fashioned Chili: Simple, hearty, and packed with classic flavor, this 30-minute chili is the ultimate cozy dinner.


Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 2 tbsp tomato paste
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped onions, jalapeños, crackers, or cornbread

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3–4 minutes until soft.
  2. Add ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
  3. Stir in garlic and cook for 1 minute.
  4. Add chili powder, cumin, paprika, salt, and pepper. Stir to coat the meat evenly.
  5. Add beans, diced tomatoes, tomato sauce, and tomato paste. Stir well to combine.
  6. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes, stirring occasionally.
  7. Taste and adjust seasoning as needed.
  8. Serve hot with your favorite toppings and sides!

Notes

  • Best when topped with shredded cheese, sour cream, or chopped onions.
  • For thicker chili, simmer longer or add extra tomato paste.
  • Leftovers taste even better the next day; refrigerate up to 3 days or freeze for longer storage.
