- 1 tbsp olive oil
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 2 tbsp tomato paste
- 2 tbsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- Salt and black pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped onions, jalapeños, crackers, or cornbread
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3–4 minutes until soft.
- Add ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
- Stir in garlic and cook for 1 minute.
- Add chili powder, cumin, paprika, salt, and pepper. Stir to coat the meat evenly.
- Add beans, diced tomatoes, tomato sauce, and tomato paste. Stir well to combine.
- Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes, stirring occasionally.
- Taste and adjust seasoning as needed.
- Serve hot with your favorite toppings and sides!
Notes
- Best when topped with shredded cheese, sour cream, or chopped onions.
- For thicker chili, simmer longer or add extra tomato paste.
- Leftovers taste even better the next day; refrigerate up to 3 days or freeze for longer storage.
