- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 medium carrot, chopped
- 1 medium parsnip, chopped
- 1 medium potato, cubed
- 1 cup chopped butternut squash
- 4 cups vegetable broth
- 1 cup cooked chickpeas
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp ground cumin
- Salt and pepper to taste
- 1 handful kale or spinach leaves
- Juice of 1/2 lemon
- Optional: a splash of coconut milk for creaminess
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until softened.
- Stir in carrot, parsnip, potato, and squash. Cook for 5 minutes, stirring occasionally.
- Pour in vegetable broth, chickpeas, thyme, rosemary, cumin, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20–25 minutes until veggies are tender.
- Stir in kale or spinach and lemon juice. Simmer for another 2–3 minutes until greens are wilted.
- For extra creaminess, add a splash of coconut milk before serving.
Notes
- This soup is vegan when coconut milk is omitted.
- You can swap kale for spinach if desired.
- Leftovers keep well in the fridge for 3–4 days; freeze for longer storage.
- Squeeze in a little extra lemon juice to brighten the flavor just before serving.
- Thicken slightly by simmering a bit longer or partly blending a portion of the soup.
