Description

Mini Pumpkin Bread with Cinnamon Swirl – Ultra-moist, perfectly spiced mini loaves swirled with a cinnamon sugar ribbon, ideal for gifting or cozy fall mornings.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cloves
  • 3/4 cup pure pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil or melted butter
  • 1 egg
  • 1 tsp vanilla extract

For the cinnamon swirl:

  • 2 tbsp sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line 4 mini loaf pans (or one standard loaf pan if preferred).
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, mix pumpkin puree, brown sugar, oil, egg, and vanilla until smooth.
  4. Add dry ingredients to the wet mixture and stir just until combined—do not overmix.
  5. In a small bowl, mix the cinnamon and sugar for the swirl.
  6. Fill each mini loaf pan halfway with batter, sprinkle some cinnamon sugar, then top with remaining batter. Sprinkle more cinnamon sugar on top.
  7. Bake for 22–26 minutes, or until a toothpick comes out clean. Let cool before removing from pans.

Notes

  • Yields: 4 mini loaves.
  • Perfect for gifting or cozy fall mornings with coffee.
  • If you don’t have mini loaf pans, bake the batter in one standard loaf pan and increase bake time to about 45–50 minutes, checking for doneness with a toothpick.
