Description

Instant Pot French Onion Pot Roast: Tender, juicy beef infused with rich caramelized onion flavor in a one-pot Instant Pot meal.


Ingredients

  • 34 lbs beef chuck roast
  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce (halal version)
  • 1 cup beef broth
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • Fresh parsley, for garnish (optional)

Instructions

  1. Set your Instant Pot to sauté mode. Add olive oil and sear the roast on all sides until browned, about 4–5 minutes per side. Remove and set aside.
  2. Add onions to the pot and sauté until golden and caramelized, about 10–15 minutes. Stir often.
  3. Add garlic and tomato paste. Cook for another minute.
  4. Deglaze with beef broth, scraping up all the browned bits from the bottom. Stir in Worcestershire sauce, thyme, salt, pepper, and paprika.
  5. Return the roast to the pot, nestling it into the onion mixture.
  6. Lock the lid, set valve to sealing, and pressure cook on high for 60 minutes.
  7. Let pressure naturally release for 15–20 minutes, then quick release any remaining pressure.
  8. Remove roast, slice or shred, and serve with the onion gravy spooned over top. Garnish with parsley if desired.

Notes

  • For a thicker gravy, remove the roast after cooking and simmer the onion gravy until reduced to your liking.
  • To make this gluten-free, be sure the Worcestershire sauce used is gluten-free and that your beef broth is gluten-free.
  • Leftovers can be stored in the refrigerator for up to 3-4 days.
