Instant Pot French Onion Pot Roast: Tender, juicy beef infused with rich caramelized onion flavor in a one-pot Instant Pot meal.
Ingredients

- 3–4 lbs beef chuck roast
- 2 tbsp olive oil
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce (halal version)
- 1 cup beef broth
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- Fresh parsley, for garnish (optional)
Instructions
- Set your Instant Pot to sauté mode. Add olive oil and sear the roast on all sides until browned, about 4–5 minutes per side. Remove and set aside.
- Add onions to the pot and sauté until golden and caramelized, about 10–15 minutes. Stir often.
- Add garlic and tomato paste. Cook for another minute.
- Deglaze with beef broth, scraping up all the browned bits from the bottom. Stir in Worcestershire sauce, thyme, salt, pepper, and paprika.
- Return the roast to the pot, nestling it into the onion mixture.
- Lock the lid, set valve to sealing, and pressure cook on high for 60 minutes.
- Let pressure naturally release for 15–20 minutes, then quick release any remaining pressure.
- Remove roast, slice or shred, and serve with the onion gravy spooned over top. Garnish with parsley if desired.
Notes
- For a thicker gravy, remove the roast after cooking and simmer the onion gravy until reduced to your liking.
- To make this gluten-free, be sure the Worcestershire sauce used is gluten-free and that your beef broth is gluten-free.
- Leftovers can be stored in the refrigerator for up to 3-4 days.
