- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, toss cubed sweet potatoes, sliced sausage, and red onion with olive oil, garlic, honey, soy sauce, thyme, salt, and pepper.
- Spread mixture evenly on the baking sheet.
- Roast for 25 to 30 minutes, stirring halfway through, until the sweet potatoes are tender and edges are caramelized.
- Garnish with fresh parsley before serving, if desired.
Notes
- For crisper edges, soak cut sweet potatoes in cold water for 15-30 minutes to remove surface starch, then thoroughly dry before roasting.
- Cut potatoes and sausages into even sizes for uniform cooking.
