Instructions

  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, melted butter, honey, and egg until smooth.
  4. Combine wet and dry ingredients just until mixed. Stir in cheese or jalapeños if using.
  5. Spoon batter into mini muffin tin, filling each about ¾ full.
  6. Bake for 12–15 minutes, or until golden and a toothpick comes out clean.
  7. While still warm, brush tops with remaining melted butter and drizzle lightly with honey.
