- ¾ cup buttermilk
- ¼ cup melted butter (plus 2 tbsp for brushing)
- 2 tbsp honey (plus extra for drizzling)
- 1 egg
- Optional: ¼ cup shredded cheddar or diced jalapeños for a savory twist
Instructions
- Preheat oven to 400°F (200°C). Grease a mini muffin tin or line with mini cupcake liners.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, melted butter, honey, and egg until smooth.
- Combine wet and dry ingredients just until mixed. Stir in cheese or jalapeños if using.
- Spoon batter into mini muffin tin, filling each about ¾ full.
- Bake for 12–15 minutes, or until golden and a toothpick comes out clean.
- While still warm, brush tops with remaining melted butter and drizzle lightly with honey.
- Serve warm or at room temperature as a snack, appetizer, or side!
