Description

Homemade Pumpkin Pecan Cobbler is a warm, gooey fall dessert that bakes into its own caramel-like sauce, blending pumpkin, pecans, and spices for cozy autumn comfort.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup granulated sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • ½ cup pumpkin puree
  • ¼ cup milk
  • ¼ cup melted butter
  • 1 ½ tsp vanilla extract
  • ½ cup chopped pecans
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 ½ cups hot water

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, salt, sugar, and all spices.
  3. Add pumpkin puree, milk, melted butter, and vanilla extract. Stir until just combined.
  4. Spread batter evenly into the prepared dish.
  5. In a small bowl, mix brown sugar, granulated sugar, and chopped pecans. Sprinkle this evenly over the batter.
  6. Carefully pour the hot water over the top (do not stir).
  7. Bake for 40–45 minutes, until the center is set and a gooey sauce has formed underneath.
  8. Let cool slightly before serving. Best enjoyed warm with a scoop of vanilla ice cream.

Notes

  • Best served warm with a scoop of vanilla ice cream.
  • Let the cobbler rest for a few minutes before serving to thicken the sauce.
  • Leftovers can be stored in the fridge for up to 3 days and reheated gently.
  • Substitute gluten-free flour if needed.
