  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 3 medium potatoes, thinly sliced
  • 1 medium carrot, peeled and diced
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes (with juice)
  • 1 cup beef broth (or chicken broth)
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 1½ cups shredded cheddar cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Stir in onion and garlic; cook for 2–3 minutes until softened. Season with paprika, oregano, salt, and pepper.
  3. In a greased 9×13-inch baking dish, layer half of the sliced potatoes. Top with half the beef mixture, then add half the carrots, bell pepper, and diced tomatoes.
  4. Repeat the layers with remaining potatoes, beef mixture, and vegetables.
  5. Pour the broth evenly over the top. Cover with foil and bake for 45 minutes.
  6. Remove foil, sprinkle shredded cheese on top, and bake uncovered for an additional 15 minutes or until the cheese is bubbly and golden.
  7. Let rest 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

  • You can substitute ground turkey for beef for a lighter version.
  • If you prefer a spicier casserole, add a pinch of red pepper flakes.
