  • 1 small onion, diced
  • 3 garlic cloves, minced

  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes with green chilies
  • 3 cups chicken broth
  • 4 oz cream cheese, softened
  • ½ cup Greek yogurt (for extra protein and creaminess)
  • 1 cup shredded cheddar or Mexican blend cheese
  • Salt and black pepper to taste

Instructions

  1. In a large pot, cook ground turkey or chicken with onion over medium heat until browned. Add garlic and cook 1 more minute.
