Halloween Pumpkin Bites are a sweet, spiced, poppable Halloween snack that’s easy to make in three steps.

- 1 cup pumpkin puree
- ½ cup brown sugar
- ¼ cup granulated sugar
- ¼ cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- Optional Topping: 2 tbsp cinnamon sugar
- Optional Topping: 2 tbsp melted butter
Instructions
- Preheat oven to 350°F (175°C). Grease or line a mini muffin tin.
- In a bowl, whisk together pumpkin puree, sugars, oil, egg, and vanilla until smooth.
- In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Spoon batter into mini muffin tins, filling each about ¾ full.
- Bake for 10–12 minutes or until a toothpick comes out clean.
- Let cool slightly. For an extra treat, brush with melted butter and roll in cinnamon sugar.
- Serve warm or at room temperature—and watch them disappear!
