Ingredients

  • 3 cups green beans, trimmed and halved (fresh or frozen)
  • 3 cups thinly sliced potatoes (Yukon Gold or red potatoes work well)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • ½ cup milk
  • 1½ cups shredded cheddar cheese
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • ½ tsp paprika
  • 1 tbsp olive oil
  • Optional topping: ½ cup gluten-free breadcrumbs or crushed gluten-free crackers

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté onions and garlic for 2–3 minutes until soft.
  3. In a large bowl, combine green beans, sliced potatoes, sautéed onions and garlic, sour cream, milk, cheese, salt, pepper, thyme, and paprika. Mix well.
  4. Pour mixture into the prepared dish and spread evenly.
  5. Cover with foil and bake for 40 minutes.
  6. Uncover, add optional breadcrumb topping, and bake for another 15–20 minutes until bubbly and golden on top.
  7. Let cool for 5–10 minutes before serving.

Notes

  • You can substitute heavy cream for milk (1:1) for a richer, thicker, creamier casserole; you may need to adjust with a splash of milk if it seems too thick.
  • For a gluten-free topping, use gluten-free breadcrumbs or crushed gluten-free crackers.
  • Fresh or frozen green beans both work; adjust cooking time if using frozen beans to ensure tenderness.
  • Classic onions topping can be replaced with crispy fried onions if available, or omitted.
