Ingredients

  • 2 large boneless, skinless chicken breasts
  • lbs baby potatoes, halved
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ¾ cup grated parmesan cheese
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Lightly grease the bottom of your crockpot with olive oil.
  2. Place halved baby potatoes at the bottom and layer chicken breasts on top.
  3. In a bowl, mix together garlic, chicken broth, heavy cream, parmesan, salt, pepper, thyme, and parsley.
  4. Pour the mixture evenly over the chicken and potatoes.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and cooked through.
  6. Before serving, gently stir the sauce and garnish with fresh chopped parsley.
