  • 1 lb ground beef or ground turkey
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp dried thyme
  • Salt and black pepper, to taste
  • 1 cup long-grain white rice, rinsed
  • 2 ½ cups beef or chicken broth
  • 1 cup milk (or dairy-free milk of choice)
  • 1 cup shredded cheddar cheese (or dairy-free alternative)
  • ½ cup grated Parmesan cheese (or dairy-free alternative)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat butter in a large skillet over medium heat. Add ground beef and onion, cooking until beef is browned and onion softened. Drain excess fat if needed.
  2. Stir in garlic, paprika, thyme, salt, and pepper. Cook 1–2 minutes until fragrant.
  3. Add rice and stir to coat in the butter and beef mixture. Pour in broth, bring to a boil, then reduce heat to low. Cover and simmer 18–20 minutes until rice is tender and liquid is absorbed.
  4. Stir in milk, cheddar, and Parmesan until creamy and smooth.
