French Onion Ground Beef and Rice Casserole: A rich, savory casserole that combines caramelized onions, seasoned ground beef, fluffy rice, and a creamy sauce, all baked with melty cheese on top. Pure comfort food in every bite!

- 1 tbsp olive oil
- 1 lb ground beef or ground turkey
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and black pepper, to taste
- 1 cup uncooked white rice
- 2 cups beef or vegetable broth
- 1 cup milk (or dairy-free milk of choice)
- 1 tbsp soy sauce
- 1 cup shredded mozzarella or dairy-free cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add onions and cook 15–20 minutes, stirring occasionally, until golden and caramelized. Stir in garlic, thyme, salt, and pepper. Remove half of the onions and set aside for topping.
- Add ground beef to the skillet with remaining onions, cooking until browned.
- Stir in uncooked rice, broth, milk, and soy sauce. Bring to a simmer.
- Transfer mixture to a greased 9×13 baking dish. Cover tightly with foil and bake for 30 minutes.
- Remove foil, top with reserved caramelized onions and cheese. Bake uncovered for 10–15 minutes until cheese is melted and bubbly.
- Sprinkle with parsley and serve warm.
Notes
- You can substitute ground turkey for ground beef as a lighter option.
- For a gluten-free version, use gluten-free soy sauce or tamari and ensure the broth is gluten-free.
- Leftovers refrigerate well for 3–4 days.
