  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes (optional)
  • 1 tbsp all-purpose flour
  • 4 cups chicken broth
  • 1½ cups cooked, shredded chicken (rotisserie works great)
  • 6 lasagna noodles, broken into bite-sized pieces
  • ½ cup heavy cream
  • 1 cup milk
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 1½ cups fresh spinach, roughly chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and sauté until soft, about 4 minutes.
  2. Stir in garlic, Italian seasoning, and red pepper flakes. Cook for 1 minute until fragrant.
  3. Sprinkle in the flour and stir to coat. Cook for 1–2 minutes.
  4. slowly add chicken broth while stirring. Bring to a boil.
  5. Add broken lasagna noodles and cook for 8–10 minutes until tender, stirring occasionally.
  6. Add shredded chicken, milk, and heavy cream. Stir well and let simmer for 3–4 minutes.
  7. Stir in mozzarella and parmesan cheese until melted.
  8. Add spinach and cook for 2 more minutes until wilted. Season with salt and pepper to taste.
  9. Serve hot with more cheese or fresh herbs if desired.
