Easy White Chicken Lasagna Soup: A creamy, comforting one-pot soup that captures all the cozy flavors of white chicken lasagna without the fuss.

- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp crushed red pepper flakes (optional)
- 1 tbsp all-purpose flour
- 4 cups chicken broth
- 1½ cups cooked, shredded chicken (rotisserie works great)
- 6 lasagna noodles, broken into bite-sized pieces
- ½ cup heavy cream
- 1 cup milk
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 1½ cups fresh spinach, roughly chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and sauté until soft, about 4 minutes.
- Stir in garlic, Italian seasoning, and red pepper flakes. Cook for 1 minute until fragrant.
- Sprinkle in the flour and stir to coat. Cook for 1–2 minutes.
- slowly add chicken broth while stirring. Bring to a boil.
- Add broken lasagna noodles and cook for 8–10 minutes until tender, stirring occasionally.
- Add shredded chicken, milk, and heavy cream. Stir well and let simmer for 3–4 minutes.
- Stir in mozzarella and parmesan cheese until melted.
- Add spinach and cook for 2 more minutes until wilted. Season with salt and pepper to taste.
- Serve hot with more cheese or fresh herbs if desired.

- Tip: For an extra creamy texture, whisk in an additional splash of cream at the end.
- Shortcut: Use rotisserie chicken to cut prep time even more.
