- 2 lbs boneless, skinless chicken thighs, cut into chunks
- ½ cup low-sodium soy sauce
- ¼ cup ketchup
- ¼ cup honey or brown sugar
- ¼ cup apple juice or pineapple juice
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- ½ tsp onion powder
- ¼ tsp crushed red pepper flakes (optional)
- 2 tbsp cornstarch
- 2 tbsp water
- 1 tbsp olive oil
- Chopped green onions and sesame seeds for garnish
Instructions
- Lightly grease the bottom of your Crock Pot with olive oil.
- Add the chicken pieces to the slow cooker.
- In a small bowl, whisk together soy sauce, ketchup, honey (or brown sugar), juice, garlic, ginger, onion powder, and red pepper flakes.
- Pour the sauce over the chicken and stir to coat.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is fully cooked and tender.
- Mix cornstarch with water to make a slurry. Stir it into the Crock Pot during the last 30 minutes of cooking to thicken the sauce.
- Once thickened, give it a good stir. Garnish with green onions and sesame seeds before serving.
- Serve hot over rice or noodles.
Notes
- Use low-sodium soy sauce to keep the dish from becoming too salty.
- Red pepper flakes are optional for a touch of heat.
- Leftovers can be stored in the refrigerator for up to 3–4 days.
- If you prefer a thicker sauce, add a bit more cornstarch slurry, 1 teaspoon at a time.
