Description

Crock Pot Sweet Soy Chicken is a 3-ingredient easy, tasty slow cooker dish with a sticky, sweet-savory glaze the family will love.


Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into chunks
  • ½ cup low-sodium soy sauce
  • ¼ cup ketchup
  • ¼ cup honey or brown sugar
  • ¼ cup apple juice or pineapple juice
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • ½ tsp onion powder
  • ¼ tsp crushed red pepper flakes (optional)
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp olive oil
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. Lightly grease the bottom of your Crock Pot with olive oil.
  2. Add the chicken pieces to the slow cooker.
  3. In a small bowl, whisk together soy sauce, ketchup, honey (or brown sugar), juice, garlic, ginger, onion powder, and red pepper flakes.
  4. Pour the sauce over the chicken and stir to coat.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is fully cooked and tender.
  6. Mix cornstarch with water to make a slurry. Stir it into the Crock Pot during the last 30 minutes of cooking to thicken the sauce.
  7. Once thickened, give it a good stir. Garnish with green onions and sesame seeds before serving.
  8. Serve hot over rice or noodles.

Notes

  • Use low-sodium soy sauce to keep the dish from becoming too salty.
  • Red pepper flakes are optional for a touch of heat.
  • Leftovers can be stored in the refrigerator for up to 3–4 days.
  • If you prefer a thicker sauce, add a bit more cornstarch slurry, 1 teaspoon at a time.
