  • 1 ½ lbs boneless skinless chicken breasts
  • 1 (28 oz) can crushed tomatoes
  • 1 (14 oz) can diced tomatoes
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 cup heavy cream (or half-and-half)
  • 1 cup freshly grated parmesan cheese
  • 2 cups baby spinach (optional)
  • Fresh basil or parsley for garnish

Instructions

  1. Place chicken, crushed tomatoes, diced tomatoes, broth, onion, garlic, Italian seasoning, red pepper flakes, salt, and pepper in crock pot.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
  3. Remove chicken, shred with two forks, and return to crock pot.
  4. Stir in cream, parmesan cheese, and spinach (if using). Cover and cook another 10–15 minutes until creamy and heated through.
  5. Ladle into bowls, garnish with fresh basil or parsley, and serve with crusty bread.

Notes

  • For a lighter version, use half-and-half or milk instead of heavy cream.
  • Stir in spinach just before serving if you want extra greens.
