- 1 ½ lbs boneless skinless chicken breasts
- 1 (28 oz) can crushed tomatoes
- 1 (14 oz) can diced tomatoes
- 4 cups chicken broth
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 1 cup heavy cream (or half-and-half)
- 1 cup freshly grated parmesan cheese
- 2 cups baby spinach (optional)
- Fresh basil or parsley for garnish
Instructions
- Place chicken, crushed tomatoes, diced tomatoes, broth, onion, garlic, Italian seasoning, red pepper flakes, salt, and pepper in crock pot.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
- Remove chicken, shred with two forks, and return to crock pot.
- Stir in cream, parmesan cheese, and spinach (if using). Cover and cook another 10–15 minutes until creamy and heated through.
- Ladle into bowls, garnish with fresh basil or parsley, and serve with crusty bread.
Notes
- For a lighter version, use half-and-half or milk instead of heavy cream.
- Stir in spinach just before serving if you want extra greens.
- Let leftovers cool completely before refrigerating; refrigerate up to 3-4 days.
- To freeze, omit the spinach and add after thawing; cream may separate when reheated.
