- 1 lb halal ground sausage or turkey sausage
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 block (8 oz) cream cheese, cubed
- 1 package (9 oz) refrigerated or frozen cheese tortellini
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- Salt and pepper to taste
Instructions
- In a skillet, cook sausage over medium heat until browned. Drain any excess fat.
- Transfer the sausage to the slow cooker.
- Add broth, diced tomatoes (with juice), Italian seasoning, garlic powder, and cream cheese.
- Cover and cook on low for 4–5 hours, stirring occasionally to help melt and mix the cream cheese.
- Add tortellini and spinach during the last 30 minutes of cooking. Stir gently to combine.
- Cook until tortellini is tender and soup is creamy.
- Season with salt and pepper to taste. Serve warm with crusty bread if desired.
