- 2 tbsp olive oil
- 2 lbs boneless, skinless chicken thighs or breasts
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ cup sliced pepperoncini peppers
- ½ cup pepperoncini brine
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated parmesan cheese
- 1 tsp Italian seasoning
- Fresh parsley, for garnish
Instructions
- Season chicken with salt, pepper, garlic powder, and onion powder.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 4–5 minutes on each side until golden and cooked through. Remove and set aside.
- In the same skillet, reduce heat to medium and add sliced pepperoncinis and pepper brine. Stir and let simmer for 2 minutes.
- Add heavy cream, chicken broth, parmesan cheese, and Italian seasoning. Stir until smooth and creamy.
- Return the chicken to the skillet and spoon the sauce over the top. Simmer for another 5 minutes to let the flavors meld.
- Garnish with chopped parsley and serve warm.
Notes
- Can be made with chicken thighs or breasts; adjust cook time accordingly.
- For a thicker sauce, simmer a few extra minutes or whisk in a little extra cream.
- Leftovers refrigerate well for up to 3 days; reheat gently on the stovetop.
- Serve with pasta, rice, or crusty bread to soak up the sauce.
- Adjust heat by using more or fewer pepperoncini to taste.
