- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp dried oregano
- 1 can (10 oz) red enchilada sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) sweet corn, drained
- 1 can (14.5 oz) diced tomatoes
- 2 cups low-sodium chicken broth
- 1 block (8 oz) cream cheese, cubed and softened

Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 4–5 minutes.

- Add shredded chicken, cumin, chili powder, paprika, and oregano. Stir to coat evenly.
- Pour in enchilada sauce, black beans, corn, diced tomatoes, and chicken broth. Bring to a boil.
- Reduce heat and let simmer for 15 minutes, allowing the flavors to combine.
- Add cubed cream cheese and stir until completely melted and soup is creamy.
- Season with salt and pepper to taste.
- Serve hot with your favorite toppings.
Notes
- For a lighter version, use light cream cheese or reduce amount.
- Taste and adjust seasoning; chili powder heat may vary.
- If you don’t have cream cheese, whisk in 1/4 cup sour cream at the end for extra creaminess.
- To make it spicier, add a dash of hot sauce or jalapeño.
