Description

Cheesy Ground Beef and Potato Casserole is a cozy one-pan dinner featuring savory ground beef, tender potatoes, and gooey cheddar cheese.


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp chili flakes (optional)
  • 4 medium potatoes, thinly sliced
  • 1½ cups shredded cheddar cheese
  • 1 cup milk
  • 2 eggs
  • 2 tbsp flour
  • 2 tbsp chopped parsley (optional for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
  3. Add onion and garlic, sauté for 2–3 minutes until softened. Stir in paprika, salt, pepper, and chili flakes. Remove from heat.
  4. In a greased baking dish, layer half of the sliced potatoes, then spread half of the beef mixture over them. Repeat with remaining potatoes and beef.
  5. In a bowl, whisk together eggs, milk, and flour until smooth. Pour over the casserole.
  6. Top evenly with shredded cheddar cheese.
  7. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 15–20 minutes until golden and bubbly.
  8. Let it rest for 5 minutes before serving. Garnish with parsley if desired.

Notes

  • For a lighter version, substitute ground turkey for beef.
  • Use russet potatoes for best texture.
  • Whisk in a splash more milk for extra creaminess if desired.
  • Let the casserole rest 5–10 minutes before serving to help it set.
