Cheesy Ground Beef and Potato Casserole is a cozy one-pan dinner featuring savory ground beef, tender potatoes, and gooey cheddar cheese.

- 1 lb ground beef (or ground turkey)
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp chili flakes (optional)
- 4 medium potatoes, thinly sliced
- 1½ cups shredded cheddar cheese
- 1 cup milk
- 2 eggs
- 2 tbsp flour
- 2 tbsp chopped parsley (optional for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
- Add onion and garlic, sauté for 2–3 minutes until softened. Stir in paprika, salt, pepper, and chili flakes. Remove from heat.
- In a greased baking dish, layer half of the sliced potatoes, then spread half of the beef mixture over them. Repeat with remaining potatoes and beef.
- In a bowl, whisk together eggs, milk, and flour until smooth. Pour over the casserole.
- Top evenly with shredded cheddar cheese.
- Cover with foil and bake for 40 minutes. Remove foil and bake an additional 15–20 minutes until golden and bubbly.
- Let it rest for 5 minutes before serving. Garnish with parsley if desired.
Notes
- For a lighter version, substitute ground turkey for beef.
- Use russet potatoes for best texture.
- Whisk in a splash more milk for extra creaminess if desired.
- Let the casserole rest 5–10 minutes before serving to help it set.
