Description

Cheesy Ground Beef Enchiladas are a saucy, cheesy one-pan family favorite that’s quick and easy.

  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin

  • 1 cup enchilada sauce (store-bought or homemade)
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 6 corn tortillas (gluten-free)
  • 1 tbsp olive oil
  • Optional toppings: chopped cilantro, sour cream, diced avocado, green onions

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add ground beef, onion, and garlic. Cook until beef is browned and onions are soft. Drain excess fat.
  3. Stir in chili powder, cumin, paprika, salt, and pepper. Cook for 1-2 minutes more.
  4. Warm tortillas slightly to make them easier to roll.
  5. Fill each tortilla with beef mixture and a sprinkle of cheese. Roll tightly and place seam-side down in a greased baking dish.
  6. Pour enchilada sauce over the top and sprinkle with remaining cheese.
