- ¾ cup shredded carrots
- ¾ cup diced celery
- 1 tsp garlic powder

- 3 cups chicken broth
- ¼ cup all-purpose flour
- 2 cups whole milk
- 8 oz Velveeta cheese, cubed
- Salt and pepper to taste
- Optional: chopped green onions or parsley for garnish
Instructions
- In a large soup pot, heat olive oil over medium heat. Add onions, carrots, and celery. Sauté until tender, about 5–6 minutes.
- Add ground beef and cook until no longer pink. Drain excess fat.
- Stir in garlic powder, potatoes (or hashbrowns), and chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
- In a separate bowl, whisk flour with milk until smooth. Slowly add to soup while stirring constantly. Cook over medium heat for 5–7 minutes until soup thickens.
- Stir in Velveeta cheese and cook until melted and fully blended.
- Season with salt and pepper to taste.
- Garnish with green onions or parsley if desired and serve hot with crusty bread or crackers.
