Description

  • ¾ cup diced celery

  • 3 cups chicken broth
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • 8 oz Velveeta cheese, cubed
  • Salt and pepper to taste
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Add onions, carrots, and celery. Sauté until tender, about 5–6 minutes.
  2. Add ground beef and cook until no longer pink. Drain excess fat.
  3. Stir in garlic powder, potatoes (or hashbrowns), and chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
