- 4 medium russet potatoes, peeled and diced

- 1 small onion, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup milk (or half-and-half for creamier texture)
- 1 ½ cups shredded sharp cheddar cheese
- 1 tsp dried thyme
- 1 tsp dried parsley
- ½ tsp smoked paprika
- Salt and black pepper to taste
- Optional toppings: green onions, extra cheddar, turkey bacon crumbles, sour cream
Instructions
- Heat olive oil or butter in a large pot over medium heat. Sauté onion until soft, then add garlic and cook until fragrant.
- Stir in diced potatoes, thyme, parsley, paprika, salt, and pepper. Cook for 2–3 minutes.
- Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer 20 minutes until potatoes are tender.
- Lightly mash some of the potatoes in the pot for a creamier texture.
- Stir in milk and cheddar cheese, cooking until smooth and creamy.
- Adjust seasoning, then serve hot with your favorite toppings.
Notes
- For a thicker soup, mash more potatoes or use less broth.
- For a creamier texture, use half-and-half or heavy cream instead of milk.
- To make it vegan, substitute plant-based milk and vegan cheese, and omit the optional toppings.
