Ingredients
Scale
- 12 slider buns or mini brioche rolls
- 1 1/2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
- 1 cup buttermilk (or plain yogurt)
- 1 cup flour
- 1/2 cup cornstarch
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper to taste
- Oil for frying (or baking/air frying for lighter version)
- For Bang Bang Sauce:
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tbsp sriracha (adjust to heat preference)
- 1 tbsp honey
- Optional toppings: shredded lettuce, sliced pickles, green onions
Instructions
- Marinate chicken in buttermilk for at least 30 minutes (or overnight for best flavor).
- In a bowl, mix flour, cornstarch, garlic powder, paprika, salt, and pepper. Dredge chicken pieces in flour mixture.
- Heat oil in a skillet and fry chicken until golden brown and cooked through (or bake/air fry at 400°F for 15–20 minutes).
- Whisk together mayonnaise, sweet chili sauce, sriracha, and honey to make Bang Bang sauce.
- Toss cooked chicken in the sauce until well coated.
- Assemble sliders: place chicken on buns, top with lettuce, pickles, or green onions if desired.
- Serve immediately while warm.
Notes
- Marinate chicken in buttermilk for at least 30 minutes (or overnight for best flavor).
- For extra crispiness, double-dredge the chicken pieces in the flour mixture before frying.
- For a lighter version, bake or air-fry the coated chicken at 400°F (200°C) for 15–20 minutes.
- Adjust heat by modifying the amount of sriracha in the Bang Bang sauce.
- Make the Bang Bang sauce ahead of time and refrigerate; re-stir before tossing with fried chicken.
- Assemble sliders just before serving to keep buns from getting soggy.
