- 2 cups finely chopped steamed broccoli (drained well)
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- ¾ cup breadcrumbs (plus extra for coating)
- 2 eggs
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper, to taste
- Optional: chili flakes for a kick
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, mix broccoli, cheddar, Parmesan, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper.
- Scoop about 1 tablespoon of the mixture and roll into balls.
- Roll each ball lightly in extra breadcrumbs for a crispier texture.
- Place on the baking sheet and bake for 20–25 minutes, turning halfway through, until golden and crisp.
- Let cool slightly before serving. Delicious with your favorite dipping sauce!
Notes
- You can substitute mozzarella for cheddar for a milder flavor.
- To make this gluten free, use gluten free breadcrumbs.
- To freeze, freeze unbaked balls on a baking sheet, then transfer to a bag.
- For extra crispiness, spray or whisk a little oil on the tops before baking.
- Serve with your favorite dipping sauce for extra flavor.
