- 1 cup all-purpose flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp cinnamon
- ¼ tsp nutmeg
- Pinch of salt
- ½ cup pumpkin puree
- ¼ cup granulated sugar
- 2 tbsp brown sugar
- 1 large egg
- 2 tbsp vegetable oil or melted butter
- ½ tsp vanilla extract
- ½ cup diced apple (peeled and small cubes)
- 2 tbsp all-purpose flour
- 2 tbsp brown sugar
- 2 tbsp cold butter, cubed
- ¼ tsp cinnamon
- 2 tbsp finely diced apple
Instructions
- Preheat oven to 350°F (175°C) and line or grease 4 muffin cups.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix pumpkin puree, granulated sugar, brown sugar, egg, oil, and vanilla until smooth.
- Add dry ingredients into wet and stir until just combined. Fold in diced apple.
- Spoon batter evenly into muffin cups.
- For the streusel, mix flour, brown sugar, butter, cinnamon, and diced apple with a fork until crumbly. Sprinkle evenly on top of muffins.
- Bake 18 minutes, or until a toothpick inserted into the center comes out clean.
- Cool slightly before serving.
Notes
- Yields 4 muffins.
- Best served warm or at room temperature.
- Can substitute vegetable oil with melted butter.
- Store leftovers in an airtight container for up to 2 days.
