Apple Cider Cheesecake: Rich, creamy cheesecake infused with reduced apple cider for a tangy fall twist.
Ingredients
- Graham cracker crumbs — 1½ cups
- Brown sugar — ¼ cup
- Ground cinnamon — ½ tsp
- Melted butter — 5 tbsp
- Cream cheese, softened — 24 oz
- Granulated sugar — ¾ cup
- Eggs — 3 large
- Sour cream — ½ cup
- Vanilla extract — 2 tsp
- Ground cinnamon — 1 tsp
- Ground nutmeg — ¼ tsp
- Salt — pinch
- Apple cider — 2 cups (reduced to ½ cup)
Instructions
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil.
- Combine graham cracker crumbs, brown sugar, cinnamon, and melted butter. Press into the bottom of the pan. Bake for 10 minutes, then set aside.
- In a saucepan, simmer apple cider over medium heat until reduced to ½ cup. Let cool.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing after each.
- Mix in sour cream, vanilla, spices, salt, and cooled reduced cider until fully combined.
- Pour filling over the crust. Place pan in a larger pan filled with hot water (water bath).
- Bake for 55–65 minutes until center is just set.
- Turn off oven, crack door, and let cheesecake rest for 1 hour. Chill at least 4 hours or overnight before serving.
- Optional: Serve with whipped cream and a drizzle of warm cider syrup.
