Description

Ingredients

  • Graham cracker crumbs — 1½ cups
  • Brown sugar — ¼ cup
  • Ground cinnamon — ½ tsp
  • Melted butter — 5 tbsp
  • Cream cheese, softened — 24 oz
  • Granulated sugar — ¾ cup
  • Eggs — 3 large
  • Sour cream — ½ cup
  • Vanilla extract — 2 tsp
  • Ground cinnamon — 1 tsp
  • Ground nutmeg — ¼ tsp
  • Salt — pinch
  • Apple cider — 2 cups (reduced to ½ cup)

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil.
  2. Combine graham cracker crumbs, brown sugar, cinnamon, and melted butter. Press into the bottom of the pan. Bake for 10 minutes, then set aside.
  3. In a saucepan, simmer apple cider over medium heat until reduced to ½ cup. Let cool.
  4. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing after each.
  5. Mix in sour cream, vanilla, spices, salt, and cooled reduced cider until fully combined.
  6. Pour filling over the crust. Place pan in a larger pan filled with hot water (water bath).
  7. Bake for 55–65 minutes until center is just set.
  8. Turn off oven, crack door, and let cheesecake rest for 1 hour. Chill at least 4 hours or overnight before serving.
  9. Optional: Serve with whipped cream and a drizzle of warm cider syrup.
